Chicken Soup with Shiitake Mushrooms and Carrots

Serves 4.

½ cup finely sliced chicken
1 teaspoon salt, or to taste
¼ teaspoon ground white pepper, or to taste
1 tablespoon cornstarch
1 tablespoon rice wine (available at Asian markets)
2 tablespoons sesame oil
4 cups chicken broth
½ cup sliced shiitake mushrooms
½ cup thinly sliced carrots

Dredge the sliced chicken in the salt, pepper, and cornstarch. Stir-fry in a wok with the rice wine and sesame oil for 2 to 3 minutes. Add the chicken broth, mushrooms, and carrots, and simmer, covered, for 15 minutes, or until chicken is cooked and vegetables are tender.
